Ingredients:
- 1 cup of pineapple chunks
- 1 cup of mango chunks
- 1 cup of mashed ripe bananas
- 1/4 cup of rum
- 2 cups of granulated sugar
- 1/4 cup of lemon juice
- 1/4 cup of butter
Instructions:
Combine the pineapple, mango, and mashed bananas in a large saucepan
Add the rum, sugar, and lemon juice to the fruit mixture and stir well
Place the saucepan over medium heat and bring the mixture to a boil, stirring frequently
Once it boils, reduce the heat to low and simmer for 20-25 minutes, or until the mixture thickens and reaches a jam-like consistency
Stir in the butter until it melts and is fully incorporated
Remove the jam from heat and let it cool slightly
Transfer the jam into sterilized jars, seal them, and process in a water bath for 10 minutes to ensure they're properly preserved
Allow the jars to cool completely before storing them in a cool, dark place
Enjoy your homemade Rum Island Butter Jam on toast, pancakes, or as a delicious tropical topping!
