Ingredients:
- 2 boneless, skinless chicken breasts, sliced into thin strips
- 2 tablespoons vegetable oil
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon honey
- 1 teaspoon cornstarch dissolved in 2 tablespoons water
- Sesame seeds and green onions for garnish
- Cooked rice for serving
Instructions:
In a bowl, mix together soy sauce, oyster sauce, honey, and cornstarch slurry
Set aside
Heat 1 tablespoon of vegetable oil in a large skillet over high heat
Add sliced chicken and stir-fry for 4-5 minutes until browned and cooked through
Remove from skillet and set aside
In the same skillet, add the remaining 1 tablespoon of oil
Add garlic and ginger, stir-fry for 30 seconds
Add bell peppers, broccoli, and snap peas
Stir-fry for 3-4 minutes until they start to soften
Return the cooked chicken to the skillet and pour the sauce mixture over everything
Stir-fry for another 2-3 minutes until the sauce thickens and coats all the ingredients
Serve hot over cooked rice, garnished with sesame seeds and sliced green onions
